Bellevue, NE- Long after the clubs have shut their doors to the public- and most likely well after you and yours have retired for the night- something's astir in the kitchen of Rumors Bar & Grill.
Small business owner Michael Schmeeckle- a newlywed husband, full time Security Guard, and budding entrepreneur- is far too busy working on his lifelong goals to sleep. In fact, even on a good night Schmeeckle will sleep roughly half of the doctor-recommended seven to eight hours of rest, and instead spends this time preparing cheesecakes in the kitchen of Rumors Bar & Grill. When asked why he deprives himself of much needed rest, Schmeeckle, with the enthusiasm of a child, replies "For the sake of a healthy and tasty cheesecake!".
Schmeeckle's Cheesecakes and More, while specializing in Low Lactose and Low Sugar Cheesecakes, isn't just for the lactose intolerant and the sugar-sensitive. Schmeeckle also makes each of his recipes attractive to athletes or those just looking to stay fit as well. According to Schmeeckle, all of his cheesecakes are made with fitness in mind by either reducing or eliminating the amount of unhealthy ingredients, and maximizing the amount of healthy ingredients like protein. Compared to those of commercial brands on NutritionData.com, Schmeeckle's cheesecakes definitely are a step above the rest when considering nutritional value. Suprisingly, unlike many healthy foods, nutrition doesn't isn't offered in lieu of great taste when it comes to Schmeeckle's cheesecakes.
As with just about everything healthy, however, there are a few slight unfamiliarities that go with this brand of cheesecake if you're used to indulging in the standard New York Style cheesecakes. For starters, Schmeeckle's cheesecakes don't inherit the shape of the typical cheesecake, instead appearing in a pie tin. Not a big deal if you value healthy over heart attack, right? Another quirk is that Schmeeckle's cheesecakes are recommended to be stored in the freezer until approximately 30 minutes prior to indulging, at which point they are served near room temperature. The downside here is minimal; the upside is incredible: Schmeeckle's cheesecakes will keep fresh for up to five months in the freezer, and two weeks in the refrigerator providing that it isn't rapidly consumed upon delivery. This "takes the cake" over The Cheesecake Factory's recommendation of three days in the refrigerator and six weeks in the freezer!
Schmeeckle's Cheesecakes and More currently offers more than ten great tasting cheesecakes that are available in either the original size for a sit-down delight or a smaller, on-the-run size, aptly named "Cheesecake-N-Go".
